Ingredients

  • 2 large ripe avocados, diced
  • 2 cups cherry or grape tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare your vegetables: Dice the avocados and cucumber. Halve the tomatoes. Thinly slice the red onion. Chop the cilantro.
  2. Place the diced avocado, tomatoes, cucumber, and red onion into a large mixing bowl.
  3. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to create the dressing.
  4. Pour the dressing over the vegetables in the large bowl.
  5. Gently toss all ingredients together until the vegetables are lightly coated. Be careful not to mash the avocado.
  6. Stir in the chopped cilantro just before serving.
