Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 pound thin-cut bacon, cut in half crosswise
1/4 cup packed brown sugar
1 tablespoon soy sauce
1 teaspoon apple cider vinegar
1/4 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and place a wire rack on top.
Pat the shrimp completely dry using paper towels. This step helps the bacon crisp up.
In a small bowl, whisk together the brown sugar, soy sauce, apple cider vinegar, and garlic powder to create the glaze.
Take one piece of shrimp and wrap it tightly with one half-piece of bacon. Secure the bacon with a toothpick if necessary.
Place the wrapped shrimp on the prepared wire rack.
Brush the tops of the bacon-wrapped shrimp generously with half of the brown sugar glaze.
Bake for 12 to 15 minutes.
Remove the baking sheet from the oven. Brush the shrimp with the remaining glaze.
Return to the oven and bake for another 3 to 5 minutes, or until the bacon is crispy and the shrimp is cooked through. Watch carefully to prevent burning the sugar.
Remove toothpicks before serving these party shrimp bites.
Notes
For the crispiest bacon shrimp, use thin-cut bacon. If you only have thick-cut bacon, you may need to increase the cooking time slightly.
If you prefer a different flavor, substitute the glaze ingredients with honey-soy sauce or a whiskey BBQ rub.
This recipe works well for low carb bacon shrimp if you omit the brown sugar glaze and use a keto-friendly sweetener or a simple salt and pepper seasoning instead.
