This recipe creates a flavorful, comforting side dish using simple ingredients baked together. It is a foolproof way to make savory rice that pairs well with many main courses.

  • 1 cup long grain white rice
  • 1 cup beef consomme
  • 1 can (10.5 oz) French onion soup
  • 1 stick (8 tablespoons) unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the uncooked rice, beef consomme, French onion soup, salt, and pepper. Stir these ingredients together until they are mixed.
  3. Cut the stick of butter into small pieces and scatter the pieces evenly over the top of the rice mixture in the baking dish. Do not stir the butter in.
  4. Cover the baking dish tightly with aluminum foil.
  5. Bake for 60 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the foil during the first 50 minutes of baking.
  6. Remove the foil and fluff the rice gently with a fork before serving.

Notes

  • For a richer flavor, you can use brown butter instead of regular butter.
  • This recipe freezes well; cool completely before storing in an airtight container.
  • You can substitute chicken broth for beef consomme if preferred, but the flavor profile will change.
