  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Scrub the sweet potatoes well under running water to remove any dirt. Pat them completely dry with a paper towel. Drying the skin helps achieve crispiness.
  3. Use a fork to pierce each sweet potato deeply 6 to 8 times all over. This allows steam to escape during baking.
  4. Rub the entire surface of each potato with olive oil. Distribute the coarse salt and black pepper evenly over the oiled skins.
  5. Place the prepared sweet potatoes directly onto the center oven rack. Do not use a baking sheet or foil, as direct heat exposure aids in skin crisping.
  6. Bake for 45 to 60 minutes. The exact time depends on the size of your potatoes. They are done when the skin is slightly wrinkled and caramelized, and a fork easily pierces the center.
  7. Remove from the oven. Let them cool for 5 minutes before slicing them open lengthwise down the center. Gently squeeze the ends to fluff the inside flesh.
  8. Serve immediately with your choice of toppings.

  • For extra crispy skin, you can bake the potatoes directly on a wire rack placed over a baking sheet to allow air circulation all around.
  • If you prefer a sweeter flavor profile, skip the salt and pepper and instead rub the potatoes with a mixture of cinnamon and a small amount of coconut oil before baking.
