Ingredients

Scale
  • 2 cups celery stalks, thinly sliced on a bias
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup toasted pecans or walnuts for extra crunch

Instructions

  1. Prepare the celery by slicing the stalks thinly on a bias to maximize crunch. Place the sliced celery, red onion, and parsley into a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, fresh lemon juice, Dijon mustard, salt, and pepper until the creamy lemon dressing is smooth.
  3. Pour the dressing over the celery mixture. Toss gently until all the vegetables are evenly coated.
  4. If using, fold in the toasted pecans or walnuts now.
  5. Cover the bowl and chill the celery salad in the refrigerator for at least 15 minutes before serving. This step helps the flavors meld and keeps the salad crisp.
  6. Serve this easy side dish cold.

Notes

  • For a Mediterranean Celery Salad variation, omit the mayonnaise and use 3 tablespoons of olive oil and 1 tablespoon of red wine vinegar for the dressing. Add 1/4 cup crumbled feta cheese and 2 tablespoons of Kalamata olives.
  • To make this a light lunch salad, add 1 cup of cooked, shredded chicken or chickpeas.
  • This salad keeps well for up to 2 days in the refrigerator, making it a good option for salads to make ahead.
