Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 lb fresh green beans, trimmed
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
1/4 cup low sodium soy sauce
2 tablespoons apple cider vinegar
1 teaspoon ground ginger
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
Season the cut chicken pieces generously with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the trimmed green beans to the same skillet. Cook, stirring occasionally, until they become bright green and slightly tender-crisp, about 4 minutes.
Add the minced garlic to the skillet with the green beans and cook for 1 minute until fragrant.
In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, ground ginger, and red pepper flakes (if using) to create the sauce.
Return the cooked chicken to the skillet. Pour the honey garlic sauce over the chicken and green beans.
Toss everything together until the chicken is fully coated and the sauce thickens slightly, about 2-3 minutes. Cook until the chicken reaches an internal temperature of 165°F (74°C).
Remove from heat and serve immediately as a complete, healthy chicken dinner.
Notes
For an extra layer of flavor, use chicken thighs instead of breasts.
If you prefer a thicker glaze, let the sauce simmer for an extra minute after adding the chicken back to the pan.
This recipe works well with other vegetables like sliced carrots or bell peppers mixed with the green beans.
