Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites with the cream of tartar (if using) until stiff peaks form. You want them firm enough to hold their shape.
  3. In a separate bowl, mix the egg yolks and the softened cream cheese until the mixture is completely smooth and uniform.
  4. Gently fold about one-third of the beaten egg whites into the yolk and cream cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites until just combined. Do not overmix; you want to keep the mixture airy.
  6. Spoon the batter onto the prepared baking sheet, forming 4 to 6 round shapes, similar to hamburger buns.
  7. Bake for 25 to 30 minutes, or until the edges are lightly golden and the tops are set and firm to the touch.
  8. Remove from the oven and let the cloud bread cool completely on the baking sheet before handling.
