  • 16 oz cottage cheese (2% or 4% fat)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1/4 cup fresh berries (for layering)
  • 2 tablespoons crushed nuts or granola (optional topping)

Instructions

  1. Place the cottage cheese, maple syrup, vanilla extract, and lemon zest into a food processor or high-speed blender.
  2. Blend the mixture until it becomes completely smooth and creamy, scraping down the sides as needed. This may take 2 to 3 minutes to achieve a texture similar to thick yogurt or cream cheese.
  3. Taste the mixture and add a small amount more sweetener if you prefer it sweeter.
  4. Spoon half of the whipped cottage cheese mixture into two small serving glasses or jars.
  5. Layer the fresh berries over the first layer in each glass.
  6. Top with the remaining whipped cottage cheese mixture.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to set.
  8. Garnish with crushed nuts or granola just before serving for added crunch.

  • For a lower sugar cottage cheese dessert, substitute the maple syrup with a zero-calorie sweetener equivalent to 1/4 cup of sugar.
