Make this single-serve cottage cheese microwave brownie when you need a fast, fudgy, chocolate dessert. This recipe is high in protein and ready in under two minutes, offering a guilt-free fix with minimal cleanup.

Ingredients

Scale
  • 1/4 cup cottage cheese (blended smooth)
  • 1 large egg white
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon baking powder
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Place the cottage cheese in a small, microwave-safe mug or ramekin. Blend it with a fork or immersion blender until completely smooth.
  2. Add the egg white, cocoa powder, sweetener, melted oil, vanilla extract, and baking powder to the mug.
  3. Mix all ingredients thoroughly until you have a uniform batter. Stir in chocolate chips if you are using them.
  4. Microwave on high for 90 seconds to 2 minutes. Cooking time varies based on microwave wattage; start checking at 90 seconds.
  5. The brownie is done when the top looks set but the center remains slightly moist for a fudgy texture.
  6. Let it cool for one minute before eating directly from the mug.

Notes

  • For the smoothest texture, blend the cottage cheese separately until it resembles thick yogurt before adding other ingredients.
  • If you prefer a firmer brownie, cook for an additional 15 seconds.
  • Serve with a sprinkle of sea salt or a small dollop of Greek yogurt for extra flavor.
