  • 1 small onion, chopped
  • 2 cups cooked white rice
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh or frozen broccoli florets, cooked until tender
  • 1/2 cup crushed butter crackers (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Melt the butter in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. In a large bowl, combine the cooked rice, cream of mushroom soup, milk, half of the cheddar cheese, salt, and pepper. Mix well.
  4. Fold in the cooked broccoli florets.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining cheddar cheese over the top of the mixture.
  7. Scatter the crushed butter crackers evenly over the cheese layer.
  8. Bake for 20 to 25 minutes, or until the casserole is bubbly and the topping is golden brown.
  9. Let the casserole rest for 5 minutes before serving.

  • If using frozen broccoli, do not thaw; cook until just tender-crisp before adding to the mixture.
  • For a richer flavor, substitute cream of chicken soup for the cream of mushroom soup.
