4 cups fresh or frozen corn kernels (thawed if frozen)
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup crumbled Cotija cheese, plus more for topping
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
Salt and black pepper to taste
Instructions
If using fresh corn, cook it briefly until tender. Cool the corn completely.
In a medium bowl, whisk together the mayonnaise, sour cream, Cotija cheese, lime juice, chili powder, and cumin until smooth. This creates your creamy dressing.
In a large bowl, combine the cooled corn kernels, red onion, and cilantro.
Pour the dressing over the corn mixture. Gently fold all ingredients together until the corn is evenly coated.
Season the salad with salt and pepper to your taste.
Cover the salad and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
