  • 1 tablespoon olive oil (for sauce)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 teaspoon dried Italian seasoning

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and garlic powder. If you prefer a thicker crust, lightly dredge the chicken in flour, shaking off any excess.
  2. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add 1 tablespoon of olive oil to the same skillet. Add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until the garlic is fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for about 2 minutes.
  6. Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Whisk in the grated Parmesan cheese until the sauce is smooth and slightly thickened. Taste the sauce and adjust salt and pepper if needed.
  8. Add the fresh spinach to the sauce. Stir until the spinach wilts down, which takes about 2 minutes.
  9. Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the chicken.
  10. Simmer for 2 more minutes to heat the chicken through. Serve immediately over pasta, mashed potatoes, or enjoy as a low-carb option.
