2 large sweet potatoes, scrubbed and cut into 1/4-inch thick fries
1 tablespoon cornstarch
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Soak the cut sweet potato fries in a large bowl of cold water for at least 30 minutes. This step removes excess starch and helps them crisp up.
Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
Drain the sweet potato fries completely and pat them very dry using paper towels or a clean kitchen cloth. You must remove as much moisture as possible.
In a medium bowl, toss the dry fries with the cornstarch until lightly coated.
Drizzle the fries with olive oil and toss again to coat evenly.
In a small bowl, mix the paprika, garlic powder, salt, and pepper. Sprinkle this seasoning mix over the fries and toss until the seasoning is distributed.
Arrange the seasoned fries in a single layer on the prepared baking sheets. Do not overcrowd the pans; use two sheets if necessary for maximum crispiness.
Bake for 15 minutes, then flip the fries. Return to the oven and bake for another 10 to 15 minutes, or until the edges are golden brown and crispy.
Serve immediately with your favorite dipping sauce.

For extra crispy sweet potato fries, ensure your sweet potatoes are completely dry before adding the oil and cornstarch.
If you prefer air fryer sweet potato fries, cook at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through.
