  • 3 medium cucumbers, thinly sliced
  • 4 medium ripe tomatoes, cut into wedges
  • 1 small red onion, thinly sliced
  • 1/4 cup white wine vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Slice the cucumbers, tomatoes, and red onion according to the ingredient list. Place all vegetables in a large bowl.
  2. In a small bowl, whisk together the white wine vinegar, olive oil, sugar, salt, and pepper until the sugar dissolves. This creates your zesty dressing.
  3. Pour the dressing over the vegetables. Gently toss everything together until the vegetables are evenly coated.
  4. For the best flavor, cover the bowl and let the salad marinate in the refrigerator for at least 15 minutes before serving. This allows the vegetables to absorb the tangy dressing.
  5. Just before serving, sprinkle with fresh chopped parsley, if you are using it. Serve this crisp vegetable salad cold.
