1 cup Medjool dates, pitted
1/2 cup hot water (or more, as needed)
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions
Place the pitted Medjool dates in a heat-safe bowl and cover them with hot water. Let the dates soak for 10 minutes to soften them completely.
Drain the dates, reserving about 1/4 cup of the soaking water.
Transfer the softened dates to a high-speed blender or food processor.
Add the vanilla extract and sea salt.
Begin blending, slowly adding the reserved soaking water one tablespoon at a time until the mixture becomes completely smooth and creamy, resembling thick caramel sauce. You may need slightly more or less water depending on your dates.
Taste the caramel and adjust salt if necessary.
Transfer the date caramel sauce to an airtight container. It will thicken as it cools.
Notes
For a thicker, fudge-like consistency, reduce the added water to just 2 tablespoons.
