  • 4 ounces Boursin cheese (or other soft herbed cheese)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 cups cherry or Roma tomatoes, diced
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • For Serving: Crusty baguette slices, pita chips, or crackers

Instructions

  1. In a medium bowl, combine the softened cream cheese, Boursin cheese, Parmesan cheese, minced garlic, and black pepper. Mix until smooth and fully combined.
  2. Spread the creamy cheese mixture evenly into the bottom of an 8×8 inch serving dish or pie plate. This forms the base layer for your dip.
  3. In a separate small bowl, combine the diced tomatoes, chopped fresh basil, balsamic vinegar, olive oil, and salt. Gently toss to coat the tomatoes.
  4. Spoon the fresh tomato mixture evenly over the cheese layer.
  5. Cover the dish and chill the dip for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a make-ahead appetizer, prepare the dip completely and keep it covered in the refrigerator for up to one day. Add the tomato topping just before serving if making more than 12 hours ahead.

  • If you do not have Boursin, substitute with 4 ounces of softened goat cheese mixed with 1 teaspoon of dried Italian seasoning.
