  • 1 large yellow onion, chopped
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups rich chicken broth (use high-quality store-bought or homemade)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound boneless, skinless chicken breast or rotisserie chicken, shredded or cubed
  • 1 cup wide egg noodles (or gluten-free noodles if needed)
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant. Do not let the garlic burn.
  3. Pour in the chicken broth. Add the dried thyme and the bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes to let the vegetables cook through and the flavors combine.
  4. Add the shredded or cubed chicken to the pot. If using raw chicken, simmer until cooked through, about 15 minutes. If using pre-cooked rotisserie chicken, simmer for 5 minutes to heat it.
  5. Increase the heat to medium and add the egg noodles. Cook according to package directions, usually 6 to 8 minutes, until the noodles are tender.
  6. Remove and discard the bay leaf. Stir in the fresh parsley. Season with salt and pepper to your taste.
  7. Serve this warm and comforting soup immediately.
