Make this simple, creamy marinated cheese appetizer ahead of time. Cubes of cheddar and cream cheese soak in a flavorful oil and herb marinade, perfect for parties and serving with crackers.

  • 8 ounces sharp cheddar cheese, cut into 1-inch cubes
  • 8 ounces cream cheese, cut into 1-inch cubes
  • 1 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Combine the cheddar cubes and cream cheese cubes in a medium, non-reactive container or a large zip-top bag.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, basil, thyme, pepper, and salt to create the marinade.
  3. Pour the marinade over the cheese cubes, ensuring all pieces are submerged.
  4. Seal the container or bag and gently toss to coat the cheese.
  5. Refrigerate the cheese for at least 8 hours, or preferably overnight, to allow the flavors to infuse. This is the best cheese for marinating.
  6. When ready to serve, let the cheese sit at room temperature for about 15 minutes before serving with crackers or pita chips.

Notes

  • You can substitute the cheddar with Monterey Jack or Havarti cheese for a different texture.
  • For a spicier kick, add 1/4 teaspoon of red pepper flakes to the marinade.
  • This is a classic make ahead appetizer; it tastes best after marinating for 24 hours.
