Make these easy, high protein frozen peanut butter Greek yogurt bites for a quick, healthy snack or low sugar dessert. They are perfect for meal prep and require no baking.

Ingredients

  • 1 cup plain non-fat Greek yogurt
  • 1/2 cup natural peanut butter, creamy
  • 1/4 cup protein powder (vanilla or unflavored)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line a mini muffin tin with paper liners or silicone cups.
  2. In a medium bowl, combine the Greek yogurt, peanut butter, protein powder, maple syrup, vanilla extract, and salt. Mix well until completely smooth and uniform.
  3. Spoon the mixture evenly into the prepared mini muffin cups, filling each about three-quarters full.
  4. Place the muffin tin in the freezer for at least 4 hours, or until completely solid.
  5. Once frozen, remove the bites from the tin and store them in an airtight, freezer-safe container or bag.

Notes

  • For an extra crunch, sprinkle a few chopped peanuts on top of each bite before freezing.
  • If you prefer a less sweet snack, reduce the maple syrup to 1 tablespoon.
  • These bites keep well in the freezer for up to one month.
