1 (16 ounce) package lasagna noodles
1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (24 ounce) jar marinara sauce
1 (15 ounce) container cottage cheese
1 large egg
1/4 cup grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded mozzarella cheese
Instructions
Cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside.
Heat the olive oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess fat.
Stir in the minced garlic and cook for 1 minute until fragrant. Add the marinara sauce and simmer for 5 minutes.
In a medium bowl, combine the cottage cheese, egg, Parmesan cheese, basil, salt, and pepper. Mix well.
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Spread a thin layer of the meat sauce on the bottom of the prepared baking dish.
Arrange one-third of the cooked lasagna noodles over the sauce.
Spread half of the cottage cheese mixture evenly over the noodles.
Spoon half of the remaining meat sauce over the cottage cheese layer.
Sprinkle one-third of the mozzarella cheese over the sauce.
Repeat the layers: noodles, remaining cottage cheese mixture, remaining meat sauce, and another third of the mozzarella cheese.
Top with the final layer of noodles and the remaining mozzarella cheese.
Bake for 30 minutes, or until the cheese is melted and bubbly. Let the lasagna rest for 10 minutes before slicing and serving.
Notes
For a higher protein lasagna, you can use lean ground turkey instead of ground beef.
If you prefer a smoother texture, blend the cottage cheese mixture briefly in a food processor before mixing in the egg and seasonings.
This recipe works well for crockpot lasagna; layer ingredients as directed and cook on low for 6-7 hours or high for 3-4 hours.
