1 cup granulated sugar
1/2 cup packed brown sugar
1 cup vegetable oil
4 large eggs
2 teaspoons vanilla extract
2 cups grated carrots
1 cup finely chopped apple (about 1 medium apple)
1 cup sweetened shredded coconut
1 cup raisins
1/2 cup chopped pecans or walnuts
Instructions
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
Add the granulated sugar and brown sugar to the dry ingredients and mix briefly.
Pour in the vegetable oil and add the eggs and vanilla extract. Mix with a whisk or wooden spoon until just combined. Do not overmix.
Fold in the grated carrots, chopped apple, shredded coconut, raisins, and chopped nuts until evenly distributed throughout the batter.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
