1 cup finely chopped pecans, plus 1/2 cup for coating
1 cup powdered sugar
1/2 cup light corn syrup
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup semi-sweet chocolate chips (for optional coating)
Instructions
Place 1 cup of finely chopped pecans in a medium bowl.
Add the powdered sugar, corn syrup, melted butter, vanilla extract, and salt to the bowl.
Mix all ingredients thoroughly until a stiff, uniform dough forms. If the mixture seems too sticky, add a tablespoon more powdered sugar.
Roll the dough into small, one-inch balls.
Spread the remaining 1/2 cup of chopped pecans onto a shallow plate.
Roll each dough ball in the chopped pecans until fully coated.
Place the coated balls on a baking sheet lined with parchment paper.
If you choose to add a chocolate coating, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip the bottom half of each pecan ball into the melted chocolate, or drizzle chocolate over the tops.
Return the balls to the parchment-lined sheet and chill in the refrigerator for at least 30 minutes, or until the chocolate sets.
Notes
You can make these ahead of time and store them in an airtight container in the refrigerator for up to one week.
For a richer flavor, toast the 1 cup of pecans lightly before chopping and mixing them into the dough.
