1 box (15.25 ounces) red velvet cake mix
1/2 cup unsalted butter, melted
2 large eggs
1 cup white chocolate chips (optional, for extra flavor)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of red velvet cake mix, the melted butter, and the eggs. Mix with a spoon or electric mixer until just combined into a thick dough. Do not overmix.
If using, gently fold in the white chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 8 to 10 minutes. The edges should be set, but the centers should still look slightly soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a crinkle cookie look, roll the dough balls in powdered sugar before baking.
For a richer, softer cookie, substitute 1/4 cup of the butter with 1/4 cup of softened cream cheese.
