Make this easy, creamy white cheese dip in your slow cooker. This Queso Blanco recipe is perfect for game days and parties, offering a restaurant-style flavor with minimal effort.

  • 1 pound white American cheese, cubed
  • 8 ounces cream cheese, cubed
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1/2 cup milk or half-and-half
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 teaspoon ground cumin
  • Pinch of salt

Instructions

  1. Place the cubed white American cheese and cream cheese into the basin of a small slow cooker.
  2. Add the undrained diced tomatoes and green chilies, undrained diced green chilies, milk, cumin, and salt to the slow cooker.
  3. Stir the ingredients together until they are mostly combined.
  4. Cover the slow cooker and cook on LOW for 1 hour, stirring every 20 minutes until the cheese is completely melted and the dip is smooth.
  5. Stir in the fresh cilantro, if using, just before serving.
  6. Keep the dip warm on the ‘Keep Warm’ setting for serving at your party or gathering.
