Prepare incredibly tender, melt in your mouth beef using your slow cooker. This easy, set it and forget it recipe features a rich garlic butter sauce perfect for weeknight dinners.

Ingredients

  • 2.5 lbs beef chuck roast, trimmed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup beef broth
  • 1/2 cup unsalted butter, cut into pieces
  • 8 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the beef roast dry with paper towels. Season all sides evenly with salt, pepper, and Italian seasoning.
  2. Place the seasoned beef roast in the bottom of your slow cooker.
  3. In a small bowl, mix together the beef broth, minced garlic, and Worcestershire sauce. Pour this mixture over the beef.
  4. Arrange the pieces of butter evenly over the top of the roast.
  5. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3.5 to 4 hours, until the beef is fork-tender.
  6. Remove the beef from the slow cooker and shred it using two forks.
  7. If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the remaining liquid in the slow cooker. Cook on HIGH for 10 to 15 minutes until thickened.
  8. Return the shredded beef to the sauce and toss to coat. Garnish with fresh parsley before serving.

  • Serve this buttery beef over mashed potatoes, egg noodles, or rice for a complete family favorite slow cooker dinner.
  • For extra flavor, you can sear the roast in a hot skillet with a little oil before placing it in the slow cooker.
