2 lbs boneless, skinless chicken breasts or thighs
Place the chicken pieces in the bottom of your slow cooker.
In a separate bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until smooth.
Pour the sauce mixture evenly over the chicken in the slow cooker.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the slow cooker. Cook on HIGH for 15 to 20 minutes, or until the sauce thickens.
Serve hot over pasta, rice, or alongside roasted vegetables.
Notes
For a low carb or Keto slow cooker chicken option, serve this dish over steamed spinach or alongside roasted broccoli instead of pasta or potatoes.
If using chicken thighs, they may require slightly longer cooking time to become fully tender.
To make this a complete meal, add 1 pound of small potatoes or 2 cups of fresh broccoli florets during the last hour of cooking.
