3 lb beef chuck roast
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 large yellow onion, sliced
4 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon dried thyme
1 lb baby carrots
1 lb small red potatoes, halved
2 tablespoons cornstarch
1/4 cup cold water
Instructions
Pat the chuck roast dry with paper towels. Season all sides with salt, pepper, and garlic powder.
Heat the olive oil in a large skillet over medium-high heat. Sear the roast on all sides until deeply browned, about 3-4 minutes per side. This step builds flavor for your juicy slow cooker roast beef.
Place the sliced onion on the bottom of your slow cooker. Place the seared roast on top of the onions.
