  • 1 cup granulated sugar, divided for topping
  • 2 teaspoons ground cinnamon
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the batter.
  3. In a separate bowl, mix the melted butter, 1 cup of granulated sugar, and vanilla extract. Stir in the egg until just combined.
  4. Add the dry ingredients to the wet ingredients and mix until you have a thick batter. Do not overmix.
  5. Spread the batter evenly into the prepared baking dish.
  6. In a small bowl, combine the remaining 1 cup of granulated sugar and the ground cinnamon for the topping.
