Ingredients
Scale
2 cups cooked sushi rice, seasoned with rice vinegar mixture
8 ounces imitation crab meat (surimi), shredded
1/4 cup mayonnaise
2 tablespoons Sriracha (adjust for spice level)
1 teaspoon sesame oil
1 teaspoon soy sauce or tamari
1 large avocado, sliced
1/2 English cucumber, thinly sliced
2 scallions, thinly sliced for garnish
1 teaspoon toasted sesame seeds for garnish
Instructions
Prepare the sushi rice according to package directions and season it with a mixture of rice vinegar, sugar, and salt. Let it cool slightly.
In a medium bowl, combine the shredded imitation crab meat, mayonnaise, Sriracha, sesame oil, and soy sauce. Mix gently until the crab is evenly coated in the spicy mayo sauce. This creates your creamy spicy crab mix.
To assemble the easy sushi bowls, divide the seasoned rice evenly among serving bowls.
Top the rice with generous portions of the creamy spicy crab mix.
Arrange the sliced avocado and cucumber around the crab mixture in each bowl.
Garnish the bowls with sliced scallions and toasted sesame seeds. Serve immediately for a quick lunch idea or chill for later meal prep.
Notes
For a lower-carb option, substitute the sushi rice with cauliflower rice.
You can add a drizzle of extra spicy mayo or a sprinkle of furikake seasoning before serving.
If you prefer real crab, substitute the imitation crab with cooked, flaked crab meat.
