  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated white cheddar cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Tortilla chips, pita bread, or crackers for serving

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the thawed and squeezed dry spinach, chopped artichoke hearts, softened cream cheese, mayonnaise, and sour cream. Mix until smooth.
  3. Stir in the Parmesan cheese, 1 cup of the mozzarella cheese, white cheddar cheese, minced garlic, salt, and pepper. Mix everything well until fully combined.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Top the dip evenly with the remaining 1 cup of mozzarella cheese.
  6. Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese on top is melted and lightly golden brown.
  7. Let the dip cool for 5 minutes before serving warm with your favorite chips or bread for dipping.

Notes

  • Squeeze as much liquid as possible from the thawed spinach; excess water makes the dip runny.
  • For an extra rich flavor, substitute half of the mayonnaise with plain Greek yogurt.
  • You can prepare this cheesy spinach dip mixture a day ahead and store it covered in the refrigerator. Add 5 minutes to the baking time if baking cold.
