  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white rice or brown rice
  • 2 cups frozen or fresh corn kernels
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 tablespoons lime juice, plus extra for serving
  • 1/4 cup crumbled cotija cheese or feta cheese
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: avocado slices, red onion

Instructions

  1. Season the chicken pieces with chili powder, cumin, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the corn kernels. Cook, stirring occasionally, until the corn is lightly charred, about 5 minutes.
  4. While the corn cooks, prepare the street corn topping: In a small bowl, whisk together the mayonnaise (or Greek yogurt), 2 tablespoons of lime juice, and a pinch of salt.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top the rice with the cooked chicken and the charred corn mixture.
  6. Drizzle the creamy lime sauce over the chicken and corn in each bowl.
  7. Garnish generously with crumbled cotija cheese and fresh cilantro. Add avocado slices or a squeeze of extra lime juice if desired.
