Make this sweet and salty snack mix coated in rich, buttery toffee. It is a simple, crunchy treat perfect for parties or holiday gatherings.

  • 6 cups Chex cereal (Rice, Corn, or Wheat)
  • 1 cup pretzels, small twists or snaps
  • 1 cup mixed nuts (like pecans or peanuts)
  • 1 cup packed light brown sugar
  • 1 cup (2 sticks) unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and nuts. Set aside.
  3. In a medium saucepan over medium heat, combine the brown sugar, butter, and corn syrup. Stir constantly until the butter melts and the mixture comes to a full boil. Let it boil for exactly one minute without stirring.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract and baking soda quickly. The mixture will foam up.
  5. Pour the hot toffee mixture evenly over the cereal, pretzel, and nut mixture in the large bowl. Gently fold everything together until the dry ingredients are completely coated.
  6. Spread the coated mix in a single layer onto the prepared baking sheets.
  7. Bake for 45 minutes, stirring the mix every 15 minutes to prevent burning and promote even coating.
  8. Remove from the oven and immediately sprinkle with salt. Let the mix cool completely on the baking sheets before breaking it apart.

Notes

  • You can use any combination of Chex cereal you prefer for this sweet crunchy snack.
  • For an extra layer of flavor, add 1 cup of chocolate chips or toffee bits after the mix cools slightly from the oven.
  • This make ahead party food stores well in an airtight container at room temperature for up to one week.
