1 pound breakfast sausage, cooked and crumbled
1 (30 ounce) bag frozen shredded hash browns, thawed
1 cup chopped onion
1 cup chopped bell pepper (any color)
10 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups shredded cheddar cheese, divided
Instructions
Grease a 9×13 inch baking dish.
Spread the thawed hash browns evenly over the bottom of the prepared dish.
In a large skillet, cook the breakfast sausage, onion, and bell pepper until the sausage is browned and vegetables are soft. Drain off any excess grease.
Spread the sausage and vegetable mixture over the hash brown layer. Sprinkle with 1 cup of the cheddar cheese.
In a separate bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
Pour the egg mixture evenly over the sausage and cheese layer.
Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Remove the plastic wrap or foil.
Bake covered for 30 minutes.
Remove the foil and sprinkle the remaining 1 cup of cheddar cheese over the top.
Bake uncovered for another 10 to 15 minutes, or until the eggs are set and the cheese is melted and lightly golden.
Let the breakfast casserole rest for 5 minutes before slicing and serving.
Notes
For a make-ahead option, assemble the entire casserole through step 5, cover, and refrigerate up to 24 hours. Add 5-10 minutes to the initial covered baking time if baking straight from the refrigerator.
You can substitute the sausage with cooked bacon or ham for a different flavor profile.
